1.5 pounds baby potatoes, halved

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko for extra crunch)

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Boil the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until they are just fork-tender. Drain the potatoes and let them cool for a few minutes.
