4 bone-in pork chops (about 1-inch thick)

1 cup freshly grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon smoked paprika

Salt and pepper to taste

2 large eggs

1 tablespoon Dijon mustard

1 cup all-purpose flour

Olive oil for frying

Fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Pat the pork chops dry with paper towels to remove excess moisture. Season both sides generously with salt and pepper.

    Set Up Dredging Station: In three separate shallow bowls, set up the dredging station:

      - Bowl 1: Place the all-purpose flour.

        - Bowl 2: In a bowl, whisk together the eggs and Dijon mustard until combined.

          - Bowl 3: In another bowl, mix the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried Italian herbs, smoked paprika, salt, and pepper.

            Coat the Pork Chops:

              - Start by dipping each pork chop in the flour, ensuring it is evenly coated. Shake off any excess.

                - Next, dip the floured chop into the egg mixture, allowing any excess to drip off.

                  - Finally, coat the chop in the Parmesan breadcrumb mixture, pressing down lightly to adhere well to the surface. Repeat this process for all chops.

                    Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium-high heat. To check if the oil is ready, drop a small piece of breadcrumb into the oil; it should sizzle and bubble immediately.

                      Fry the Pork Chops: Carefully place the coated pork chops into the hot oil, ensuring not to overcrowd the pan. Fry for about 4–5 minutes on each side or until they are golden brown and crispy. Use a meat thermometer to check the internal temperature, which should read 145°F (63°C).

                        Drain and Rest: Once cooked, transfer the pork chops to a paper towel-lined plate to drain any excess oil. Let them rest for about 5 minutes.
