Crispy Veggie Patties (No Meat, Big Flavor)

This crispy veggie patties (no meat, big flavor) is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

1 cup cooked quinoa

1 cup grated carrots

1 cup finely chopped bell peppers (any color)

1 cup cooked black beans, mashed

1/2 cup finely chopped onion

2 cloves garlic, minced

1/4 cup fresh parsley or cilantro, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder (adjust for spice preference)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup breadcrumbs (or gluten-free breadcrumbs for GF version)

1 egg (or flax egg for vegan, 1 tbsp ground flaxseed + 3 tbsp water)

Oil for frying (olive or vegetable oil)

Instructions
 

In a large mixing bowl, combine the cooked quinoa, grated carrots, chopped bell peppers, mashed black beans, chopped onion, minced garlic, and chopped parsley/cilantro.

    Add the ground cumin, smoked paprika, chili powder, salt, and black pepper to the mixture. Stir everything together until well combined.

      In a separate small bowl, whisk the egg (or mix the flaxseed and water for a vegan option), then add it to the veggie mixture.

        Gradually mix in the breadcrumbs until the mixture holds together. If it's too wet, add more breadcrumbs until the desired consistency is achieved.

          Form the mixture into small patties, about 2-3 inches in diameter.

            Heat a skillet over medium-high heat and add enough oil to coat the bottom. Once the oil is hot, carefully place the patties in the skillet.

              Cook for about 4-5 minutes on each side, or until golden brown and crispy. Do not overcrowd the skillet; work in batches if necessary.

                Once cooked, transfer the patties to a plate lined with paper towels to absorb excess oil.

                  Serve warm, with your favorite dipping sauce, in a burger bun, or on a salad!
