2 pounds beef chuck roast, cut into bite-sized pieces

1 onion, finely chopped

3 cloves garlic, minced

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

8 ounces cream cheese, softened

1 cup sour cream

2 cups mushrooms, sliced (white or cremini)

3 cups egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Meat: In a large skillet over medium-high heat, brown the beef chunks in batches until seared on all sides (about 2-3 minutes per side). Transfer to the crock pot.

    Sauté the Aromatics: In the same skillet, add the chopped onion and garlic, and sauté for about 3-4 minutes until the onion is translucent.

      Combine Ingredients: Add the sautéed onion and garlic to the crock pot with the beef. Pour in the beef broth, Worcestershire sauce, Dijon mustard, thyme, paprika, salt, and pepper. Stir well to combine.

        Add Mushrooms: Gently stir in the sliced mushrooms, ensuring they are evenly distributed throughout the mixture.

          Cook Slow: Cover the crock pot and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.

            Incorporate Creaminess: About 30 minutes before serving, add the softened cream cheese and sour cream to the crock pot. Stir until everything is well blended and creamy. If the sauce is too thick, add a bit more beef broth to reach your desired consistency.

              Cook Noodles: While the stroganoff is finishing, cook the egg noodles according to the package instructions. Drain and set aside.

                Serve: Once the stroganoff is creamy and heated through, serve it over the egg noodles, garnished with freshly chopped parsley.
