Crock-Pot Kielbasa Sausage and Beans

1 lb kielbasa sausage, sliced into rounds

1 can (15 oz) cannellini beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (red or green), chopped

1 can (14.5 oz) diced tomatoes (with juice)

2 cups chicken broth

1 tablespoon Worcestershire sauce

2 teaspoons smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

Prepare Ingredients: Begin by slicing the kielbasa into rounds. Chop the onion, bell pepper, and mince the garlic.

    Combine in Crock-Pot: In a large Crock-Pot, add the sliced kielbasa, cannellini beans, kidney beans, chopped onion, bell pepper, minced garlic, and diced tomatoes with their juice.

      Add Liquids and Seasonings: Pour in the chicken broth and Worcestershire sauce. Sprinkle in the smoked paprika, dried oregano, salt, and pepper.

        Stir and Cover: Stir the mixture until all ingredients are well-combined. Cover the Crock-Pot with its lid.

          Cook: Set the Crock-Pot on low heat and allow it to cook for 6 to 8 hours, or on high heat for about 3 to 4 hours. Stir occasionally if possible.
