Ingredients

4 bone-in pork chops (about 1-inch thick)

1 can (10.5 oz) cream of mushroom soup

1 cup low-sodium chicken broth

1 onion, sliced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

2 cups baby carrots

1 cup fresh green beans, trimmed

1 tablespoon olive oil

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions

Sear the Pork Chops: In a large skillet, heat olive oil over medium-high heat. Season pork chops with salt, pepper, paprika, and onion powder. Sear the pork chops in the skillet for 2-3 minutes on each side until they are browned. This step is optional but adds extra flavor.

Layer the Ingredients: In the bottom of the crock pot, layer the sliced onion, followed by the baby carrots, and green beans.

Prepare the Sauce: In a mixing bowl, combine the cream of mushroom soup, chicken broth, minced garlic, dried thyme, and Worcestershire sauce. Mix until well combined.

Add to Crock Pot: Place the seared pork chops on top of the vegetable layer in the crock pot. Pour the cream soup mixture over the pork chops, ensuring they're well covered.

Cook: Cover the crock pot with a lid and cook on low for 6-8 hours or on high for 3-4 hours. The pork chops should be tender and juicy when done.

Serve: Once cooked, carefully remove the pork chops and veggies from the crock pot. Serve hot, garnished with chopped parsley.

Enjoy: Serve this comforting dish with mashed potatoes, rice, or crusty bread to soak up the delicious sauce!
