1 loaf of challah or brioche bread, cut into 1-inch cubes

3 ripe bananas, sliced

6 large eggs

2 cups milk (whole or almond milk works well)

1/2 cup heavy cream

1/4 cup brown sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

A pinch of salt

1/2 cup chopped walnuts or pecans (optional)

Maple syrup for serving

Prepare the Crockpot: Grease the interior of your crockpot with cooking spray or butter to prevent sticking.

    Layer the Bread: Place the cubed challah or brioche evenly at the bottom of the crockpot. You want a nice, even layer for the best texture.

      Add Bananas: Evenly distribute the sliced bananas over the bread cubes. If using nuts, sprinkle them over the bananas.

        Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla extract, cinnamon, nutmeg (if using), and a pinch of salt until well combined.

          Combine: Pour the egg mixture evenly over the bread, bananas, and nuts. Gently press down with a spatula to ensure the bread absorbs the liquid.

            Cook: Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours. The French toast is done when the edges are golden brown and the center is set.
