Crockpot Beef & Potatoes Comfort Meal

This crockpot beef & potatoes comfort meal is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

2 lbs beef chuck roast, cut into 1.5-inch cubes

1 tablespoon olive oil

1 large onion, chopped

3 cloves garlic, minced

4 medium potatoes, peeled and cubed

3 carrots, sliced into rounds

2 cups beef broth

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet over medium-high heat, add olive oil. Once hot, sear the beef cubes on all sides until browned (about 5-7 minutes). Remove and transfer to the crockpot.

    In the same skillet, add onions and sauté for about 3-4 minutes until translucent. Stir in garlic and cook for an additional 1 minute until fragrant. Add this mixture to the crockpot.

      Layer the cubed potatoes and sliced carrots on top of the beef and onion mixture in the crockpot.

        In a separate bowl, combine the beef broth, Worcestershire sauce, thyme, paprika, salt, and pepper. Mix well, then pour this mixture over the ingredients in the crockpot.

          Cover and cook on low for 8-10 hours or on high for 4-5 hours until the beef is tender and the vegetables are cooked through.

            Taste and adjust seasoning if necessary before serving. Garnish with fresh parsley.
