Ingredients

1.5 lbs boneless, skinless chicken breasts

2 cups broccoli florets (fresh or frozen)

1 cup long-grain rice (uncooked)

2 cups chicken broth

1 cup shredded cheddar cheese

1 cup cream of chicken soup (or a homemade equivalent)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup milk (or heavy cream for extra creaminess)

1 teaspoon Italian seasoning (optional)

Fresh parsley for garnish (optional)

Instructions

Preparation of Chicken: Start by seasoning the boneless chicken breasts generously with salt, pepper, garlic powder, and onion powder. Place the seasoned chicken at the bottom of the crockpot.

Combine Ingredients: In a large mixing bowl, combine the un cooked rice, chicken broth, cream of chicken soup, and Italian seasoning (if using). Stir well until all ingredients are combined.

Layering: Pour the rice mixture over the chicken in the crockpot. Make sure the chicken is covered well.

Add Broccoli: Gently scatter the broccoli florets on top of the rice mixture. Do not stir; this will help the broccoli steam properly while cooking.

Cooking: Cover the crockpot with its lid and cook on low for 5-6 hours, or on high for 3-4 hours.

Finishing Touch: About 15 minutes before serving, add the shredded cheddar cheese and milk or cream on top of the mixture. Stir gently to combine, allowing the cheese to melt evenly.

Serve: Once the cooking time is up, ensure the chicken is cooked through (internal temperature should reach 165°F or 75°C). Fluff the rice, mix all elements together, and taste for seasoning. Adjust if necessary.

Garnish and Enjoy: Serve hot, garnished with fresh parsley for an extra touch!
