Ingredients

1 pound ground beef

4 medium potatoes, peeled and diced

1 cup carrots, diced

1 cup celery, diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups beef broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Chopped parsley for garnish (optional)

Instructions

Brown the Beef: In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and transfer the beef to the crockpot.

Prep Veggies: Add the diced potatoes, carrots, celery, chopped onion, and minced garlic to the crockpot with the cooked beef.

Add Broth: Pour the beef broth over the vegetable and meat mixture. Stir in the thyme, rosemary, salt, and pepper.

Cook on Low: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes and vegetables are tender.

Make it Creamy: About 30 minutes before serving, stir in the heavy cream. If you want, add the shredded cheddar cheese for extra creaminess and flavor.

Final Touches: Taste and adjust seasoning with salt and pepper as needed.

Serve: Ladle the soup into bowls, garnish with chopped parsley if desired, and enjoy warm!
