Ingredients

4 lbs boneless pork shoulder

1 large onion, sliced

4 cloves garlic, minced

1 cup chicken broth

1 cup barbecue sauce (your choice)

2 tablespoons apple cider vinegar

2 tablespoons brown sugar

1 tablespoon paprika

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional for heat)

Buns for serving

Coleslaw for topping (optional)

Instructions

Prep the Pork: Trim excess fat from the pork shoulder and cut it into large chunks to help it cook evenly.

Sauté the Aromatics: In a skillet, sauté the sliced onion and minced garlic until they are soft and fragrant, about 5 minutes. The goal is to enhance their flavors.

Mix the Sauce: In a bowl, combine the chicken broth, barbecue sauce, apple cider vinegar, brown sugar, paprika, chili powder, cumin, salt, black pepper, and cayenne pepper if using. Stir well to incorporate all the ingredients.

Layer in the Crockpot: Place the sautéed onions and garlic at the bottom of the crockpot. Lay the pork chunks on top, then pour the sauce mixture over the pork, ensuring that it is well-covered.

Cook: Cover the crockpot and cook on low for 8-10 hours or on high for 4-6 hours, until the pork is tender and easily shreds with a fork.

Shred the Pork: Once cooked, remove the pork chunks from the crockpot and place them on a cutting board. Use two forks to shred the meat completely.

Mix with Sauce: Return the shredded pork to the crockpot and stir it into the remaining sauce. Let it sit for an additional 15 minutes on the warm setting for the flavors to meld.

Serve: Scoop the pulled pork onto buns and top with your favorite coleslaw if desired. Enjoy the savory goodness!
