Ingredients
  

1 lb ground beef or turkey

1 cup uncooked rice (white or brown)

3 cups diced bell peppers (red, green, and yellow)

1 medium onion, diced

2 cloves garlic, minced

1 (15 oz) can diced tomatoes (with juice)

1 (15 oz) can black beans, drained and rinsed

1 cup beef or vegetable broth

2 tsp chili powder

1 tsp cumin

1 tsp Italian seasoning

Salt and pepper to taste

1 cup shredded cheese (cheddar or mozzarella)

Fresh parsley or cilantro for garnish (optional)

Instructions
 

In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if needed.

    Add the diced onion and minced garlic to the skillet and sauté for about 3-4 minutes until the onion is translucent.

      In the slow cooker, combine the cooked meat mixture, uncooked rice, diced bell peppers, diced tomatoes (with juice), black beans, broth, chili powder, cumin, Italian seasoning, salt, and pepper. Stir until all ingredients are well incorporated.

        Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the rice is tender and the liquid is absorbed.

          About 15 minutes before serving, sprinkle the shredded cheese over the top of the casserole. Cover and let it melt.

            Before serving, stir the casserole gently to mix the melted cheese. Garnish with fresh parsley or cilantro if desired.

              Serve warm and enjoy your delicious stuffed pepper casserole!
