2 lbs beef chuck, cut into 1-inch cubes

1/4 cup soy sauce

1/4 cup oyster sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

2 cloves garlic, minced

2 teaspoons ginger, grated

1-2 Thai red chili peppers, sliced (adjust based on spice preference)

1/4 cup beef broth

1 onion, sliced

1 bell pepper, sliced (red or green)

1 cup fresh Thai basil leaves

1 tablespoon cornstarch (optional, for thickening)

Cooked jasmine rice, for serving

Lime wedges, for garnish

Instructions
 

Prep the Beef: Start by trimming any excess fat from the beef chuck and cutting it into 1-inch cubes. This helps it cook evenly and absorb flavors.

    Make the Sauce: In a mixing bowl, combine soy sauce, oyster sauce, fish sauce, brown sugar, minced garlic, grated ginger, and sliced chili peppers. Whisk until well combined.

      Combine Ingredients in Crockpot: Place the cubed beef into the crockpot, followed by the sliced onion and bell pepper. Pour the sauce mixture over the beef and veggies, ensuring everything is well coated. Add the beef broth to maintain moisture during cooking.

        Cook: Cover the crockpot with the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and has absorbed all the flavors.

          Thicken the Sauce (Optional): If desired, combine 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Stir this into the crockpot 30 minutes before serving for a thicker sauce.

            Add the Basil: About 15 minutes before serving, stir in the fresh Thai basil leaves, allowing them to wilt and infuse their flavor into the dish.
