2 lbs boneless, skinless chicken breasts

1 medium onion, diced

4 cloves garlic, minced

2 cans (15 oz each) white beans (such as cannellini or great northern), drained and rinsed

1 can (4 oz) diced green chiles

2 cups low-sodium chicken broth

1 cup corn (frozen or canned)

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp salt (or to taste)

1/4 tsp black pepper

Juice of 1 lime

1 cup sour cream or Greek yogurt

1 cup shredded Monterey Jack cheese

Fresh cilantro, for garnish (optional)

Sliced jalapeƱos, for garnish (optional)

Instructions
 

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the crockpot.

    Add Vegetables: In a bowl, mix together the diced onion, minced garlic, drained white beans, diced green chiles, and corn. Pour this mixture over the chicken in the crockpot.

      Season: Pour in the chicken broth and sprinkle the cumin, chili powder, smoked paprika, salt, and black pepper over the top.

        Cook: Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.

          Shred the Chicken: Once cooked, remove the chicken breasts. Shred them with two forks and return them to the chili.

            Add Creaminess: Stir in the lime juice, sour cream (or Greek yogurt), and shredded Monterey Jack cheese until combined and creamy.

              Adjust Seasoning: Taste and adjust the seasoning as necessary, adding more salt, pepper, or lime juice to suit your preference.

                Serve: Ladle the chili into bowls and garnish with fresh cilantro and sliced jalapeƱos if desired. Enjoy it hot with tortilla chips or crusty bread.
