Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, salt, instant yeast, and baking soda. If using, add a pinch of baking powder for added fluffiness.

    Combine Wet Ingredients: In another bowl, mix the warm milk and warm water together. The liquids should be warm to touch but not hot.

      Create the Batter: Gradually pour the warm liquid into the dry ingredients, whisking continuously until you achieve a smooth batter. It should be slightly thicker than pancake batter.

        Let it Rise: Cover the bowl with a damp cloth or cling film and let it rest in a warm, draft-free place for about 1 hour, or until it has doubled in size and has bubbles forming on the surface.

          Preheat the Griddle: Heat a non-stick skillet or griddle over medium heat. Lightly grease it with melted butter.

            Cook the Crumpets: Using metal crumpet rings (or English muffin rings), place them on the griddle. Pour about 1/4 cup of crumpet batter into each ring. Cook for about 5-7 minutes, or until bubbles form on the surface and the edges begin to look set.

              Flip and Finish Cooking: Carefully remove the rings and continue to cook the crumpets for an additional 2-3 minutes on the other side until golden brown.

                Keep Warm: Transfer the cooked crumpets to a wire rack or a warm plate while you repeat the process with the remaining batter, greasing the skillet as needed.
