Crunch of Pesto Grilled Cheese Bliss

This crunch of pesto grilled cheese bliss is a simple lunch recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

4 slices of sourdough bread

1 cup of fresh basil pesto

8 oz of mozzarella cheese, sliced

4 oz of sharp cheddar cheese, grated

1/4 cup of grated Parmesan cheese

1/2 cup of sun-dried tomatoes, chopped

1/2 cup of arugula

4 tbsp of butter, softened

Salt and pepper, to taste

Instructions
 

Prep the Bread: Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.

    Layer the Ingredients: On the unbuttered side of two slices, spread a generous layer of basil pesto. Top with a layer of mozzarella cheese, followed by the grated cheddar cheese, chopped sun-dried tomatoes, and a handful of arugula. Sprinkle Parmesan cheese over the arugula, and season with salt and pepper to taste. Top with the remaining slices of bread (buttered side facing out).

      Heat the Skillet: Preheat a skillet or griddle over medium heat.

        Grill the Sandwich: Place the prepared sandwiches on the skillet. Cook for about 4-5 minutes on one side until golden brown and crispy. Carefully flip the sandwiches and grill the other side for another 4-5 minutes until the cheese is melted and the bread is golden brown.

          Serve and Enjoy: Once cooked, remove the sandwiches from the skillet, slice in half diagonally, and serve immediately. Enjoy the burst of flavors with each crunchy, cheesy bite!
