1 lb fresh cod fillets

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (optional)

1 teaspoon salt

½ teaspoon black pepper

1 cup buttermilk

2 cups panko bread crumbs

Vegetable oil (for frying)

4 sandwich buns (preferably brioche)

1 cup shredded lettuce

1 medium tomato, sliced

½ cup tartar sauce

Lemon wedges (for serving)

Instructions
 

Prepare the Cod: Rinse the cod fillets under cold water and pat dry with paper towels. Cut them into sandwich-sized pieces if needed.

    Make the Breading Station: In a shallow bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper.

      Dunk in Buttermilk: Pour the buttermilk into another shallow bowl. Dip each piece of cod in the buttermilk, allowing excess to drip off.

        Coat with Panko: Dredge the cod in the seasoned flour mixture first, then back into the buttermilk, and finally press into the panko bread crumbs until well coated. Set aside on a plate.

          Heat the Oil: In a deep skillet or frying pan, pour in enough vegetable oil to cover the bottom by about 1 inch. Heat oil over medium-high heat until it reaches 350°F (175°C).

            Fry the Cod: Carefully place the breaded cod pieces in the hot oil, cooking in batches to avoid overcrowding. Fry for about 3-4 minutes per side, or until golden brown and crispy. Use a slotted spoon to transfer cooked fillets onto a paper towel-lined plate to drain.

              Assemble the Sandwiches: Toast the sandwich buns lightly, then spread a generous amount of tartar sauce on the bottom half of each bun. Place a layer of shredded lettuce and top with a slice of tomato.

                Add the Cod: Place a crispy fried cod fillet on each sandwich. Add more tartar sauce on top if desired. Close the sandwiches with the top halves of the buns.
