Ingredients
  

2 cups dandelion petals (fresh, washed, and green parts removed)

1 cup whole milk

1 cup heavy cream

3/4 cup honey (preferably local and raw)

3 large egg yolks

1/2 teaspoon vanilla extract

Pinch of salt

Juice of 1/2 lemon (optional, for brightening flavor)

Prepare Dandelion Infusion: In a saucepan, combine the whole milk, heavy cream, and dandelion petals. Heat over medium-low heat until just before boiling. Remove from heat and let the mixture steep for about 30 minutes to allow the dandelion flavor to infuse.

    Whisk Egg Yolks and Honey: In a bowl, whisk together the egg yolks, honey, and a pinch of salt until the mixture is smooth and pale.

      Temper the Egg Yolks: Slowly pour the warm dandelion-infused milk and cream mixture into the egg yolk mixture while continuously whisking. This will temper the egg yolks and prevent them from scrambling.

        Cook the Mixture: Transfer the combined mixture back to the saucepan. Cook over medium heat while stirring continuously until it thickens and coats the back of a spoon (about 5-7 minutes). Do not let it boil.

          Chill the Base: Remove from heat and strain the mixture through a fine mesh sieve to remove the dandelion petals. Stir in the vanilla extract and lemon juice (if using). Let it cool to room temperature, then refrigerate for at least 3 hours or until thoroughly chilled.

            Churn the Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

              Freeze: Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.

                Serve: Scoop the ice cream into bowls or cones. Drizzle with extra honey if desired and enjoy the floral and sweet flavors of this unique treat!
