1 cup Medjool dates, pitted and roughly chopped

1 cup almond flour

1/2 cup unsweetened shredded coconut + extra for rolling

1/4 cup almond butter (or any nut butter of your choice)

1 teaspoon vanilla extract

A pinch of sea salt

1 tablespoon cocoa powder (optional, for a chocolate twist)

Chopped almonds or cacao nibs for extra texture (optional)

Instructions
 

Blend the Dates: In a food processor, combine the pitted Medjool dates, almond flour, almond butter, vanilla extract, and a pinch of sea salt. Blend until the mixture is well combined and resembles a sticky dough. If using cocoa powder, add it to the mixture and blend until fully incorporated.

    Mix in Coconut: Fold in the shredded coconut until evenly distributed throughout the mixture. If you want to add chopped almonds or cacao nibs for extra crunch, mix them in at this stage.
