3 ripe bananas, mashed

1/2 cup unsalted butter, melted

1/2 cup granulated sugar

1/4 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup cocoa powder

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips

1/4 cup finely ground espresso beans (or instant espresso powder)

Optional: 1/2 cup chopped walnuts or pecans

Instructions
 

Preheat your oven to 350°F (175°C). Grease an 8x4 inch loaf pan or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the mashed bananas and melted butter. Mix until smooth.

      Add the granulated sugar and brown sugar to the banana mixture, stirring until well combined.

        Mix in the eggs one at a time, followed by the vanilla extract.

          In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, salt, and ground espresso beans until well combined.

            Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix!

              Fold in the dark chocolate chips and nuts, if using.

                Pour the batter into the prepared loaf pan, spreading it out evenly.

                  Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs (not wet batter).

                    Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
