For the Chocolate Cake:

1 ¾ cups all-purpose flour

1 ¾ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ tsp baking powder

1 ½ tsp baking soda

1 tsp salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 tsp pure vanilla extract

1 cup boiling water

For the Cherry Filling:

2 cups pitted cherries (fresh or frozen)

½ cup granulated sugar

1 tbsp lemon juice

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

For the Whipped Cream Frosting:

2 cups heavy whipping cream

½ cup powdered sugar

1 tsp vanilla extract

Dark chocolate shavings (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Make the Chocolate Cake:

      - In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix until well combined.

        - Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth.

          - Carefully stir in the boiling water. The batter will be very liquidy.

            - Pour the batter evenly into the prepared cake pans.

              - Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

                - Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

                  Prepare the Cherry Filling:

                    - In a medium saucepan over medium heat, combine the pitted cherries, granulated sugar, and lemon juice. Allow to simmer for about 5 minutes.

                      - Stir in the cornstarch mixture, and cook for an additional 2-3 minutes until it thickens. Remove from the heat and let it cool.

                        Make the Whipped Cream Frosting:

                          - In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract on medium-high speed until stiff peaks form.

                            Assemble the Cake:

                              - Once the chocolate cakes are cool, slice each cake horizontally to create two layers.

                                - Place the first layer on a serving plate and spread a generous layer of whipped cream frosting over it.

                                  - Spoon half of the cherry filling on top of the whipped cream.

                                    - Place the second layer on top and repeat the process – frosting and cherry filling.

                                      - Add the third layer of cake, cover the top and sides with the remaining whipped cream frosting.

                                        - Garnish with chocolate shavings and any remaining cherries.
