4 large egg whites, at room temperature

1 cup granulated sugar

1/4 teaspoon cream of tartar

1/4 teaspoon almond extract

1/2 teaspoon peppermint extract

Pinch of salt

1/4 teaspoon vanilla extract

1/2 cup finely chopped almonds (toasted for added flavor, if desired)

Red and green sugar sprinkles (for decoration, optional)

Preheat the Oven: Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper.

    Prepare the Egg Whites: In a clean, dry mixing bowl, add the egg whites and cream of tartar. Using a hand mixer or a stand mixer fitted with the whisk attachment, beat the egg whites on medium speed until foamy.

      Incorporate Sugar: Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat. Once all sugar has been added, increase the mixer speed to high and beat until stiff peaks form and the mixture is glossy.

        Flavor the Meringue: Add the almond extract, peppermint extract, salt, and vanilla extract to the meringue. Gently fold in the toasted chopped almonds using a spatula until evenly distributed.

          Pipe the Meringues: Transfer the meringue mixture into a piping bag fitted with a star tip. Pipe small mounds (about 1.5 inches in diameter) onto the prepared baking sheets, spacing them about 1 inch apart.

            Add Sprinkles: If desired, sprinkle the tops of the meringues with red and green sugar sprinkles for a festive touch.
