Ingredients
  

6 large eggs

1/2 cup milk (dairy or non-dairy)

1 cup spinach, chopped

1/2 cup bell pepper, diced (any color)

1/4 cup red onion, finely chopped

1/2 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or feta works great)

Optional: 1/2 cup cooked bacon or sausage, crumbled

Instructions
 

Preheat your oven to 350°F (175°C) and grease a muffin tin with non-stick cooking spray or line it with muffin liners.

    In a large mixing bowl, whisk together the eggs and milk until fully incorporated.

      Stir in the chopped spinach, diced bell pepper, red onion, garlic powder, paprika, and season with salt and pepper according to your taste.

        If using meat, add the crumbled bacon or sausage to the mixture.

          Gently fold in the shredded cheese.

            Carefully pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.

              Bake in the preheated oven for 18-20 minutes, or until the muffins are set and lightly golden on top.

                Let the muffins cool in the tin for a few minutes before using a knife to carefully remove them.

                  Serve warm or allow them to cool completely before storing in an airtight container for quick breakfasts throughout the week.
