Ingredients
  

  • 6 slices turkey ham chopped
  • 8 pieces large eggs beaten
  • 1 cup cheddar cheese shredded
  • 0.5 cups bell pepper diced
  • 1 cup spinach chopped
  • 0.5 teaspoons salt to taste
  • 0.25 teaspoons black pepper to taste

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a muffin tin.
  • In a mixing bowl, combine the beaten eggs, chopped turkey ham, diced bell pepper, chopped spinach, salt, and black pepper.
  • Stir in the shredded cheddar cheese until evenly distributed.
  • Pour the egg mixture evenly into the muffin tin cups, filling each about 3/4 full.
  • Bake in the preheated oven for 20-25 minutes, or until the eggs are set and lightly golden.

Notes

These breakfast cups can be stored in the refrigerator for up to 3 days and are great for meal prep. Reheat in the microwave before serving.
