Delicious Hawaiian BBQ Chicken Sandwiches

Ingredients
  

2 large boneless, skinless chicken breasts

1 cup Hawaiian BBQ sauce (store-bought or homemade)

4 whole wheat burger buns

1 cup fresh pineapple rings

1 cup coleslaw mix (cabbage and carrots)

1/2 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Olive oil for grilling

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken breasts with 1/2 cup of the Hawaiian BBQ sauce. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Slaw: In another bowl, mix together the coleslaw mix, mayonnaise, apple cider vinegar, honey, garlic powder, paprika, salt, and pepper until well combined. Adjust seasoning to taste. Set aside in the refrigerator to chill.

      Preheat the Grill: Preheat your grill or grill pan over medium-high heat and brush lightly with olive oil.

        Grill the Chicken: Remove the chicken from the marinade and discard any leftover marinade. Place the chicken on the hot grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). In the last few minutes of cooking, add the pineapple rings to the grill and cook until caramelized and grill marks appear, about 2-3 minutes per side.

          Toast the Buns: While the chicken is grilling, split the whole wheat buns and toast them lightly on the grill for about 1-2 minutes.

            Assemble the Sandwiches: Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Slice the chicken into strips. On the bottom half of each toasted bun, place a few strips of the grilled chicken, top with a grilled pineapple ring, and add a generous spoonful of the coleslaw.

              Finishing Touches: If desired, sprinkle chopped cilantro or green onions over the top, then cap with the other half of the bun.

                Serve: Serve the Hawaiian BBQ chicken sandwiches warm and enjoy with your favorite sides, such as sweet potato fries or a fresh green salad.
