Ingredients

2 cups elbow macaroni

1 cup mayonnaise

1/4 cup sour cream

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon sugar

Salt and pepper to taste

1 cup diced ham

1/2 cup diced pineapple (fresh or canned)

1/2 cup diced celery

1/4 cup finely diced red onion

1/4 cup shredded carrots

1/4 cup green onions, chopped

1/4 cup sweet pickles, chopped (optional)

1/4 teaspoon smoked paprika (optional for extra flavor)

Instructions

Cook the Pasta: Bring a large pot of water to a boil, add a pinch of salt, and cook the elbow macaroni according to the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

Prepare the Dressing: In a large bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, sugar, salt, pepper, and smoked paprika (if using) until smooth and well combined.

Combine Ingredients: In the same bowl as the dressing, add the cooled macaroni, diced ham, pineapple, celery, red onion, carrots, green onions, and sweet pickles (if using). Gently fold the ingredients together until well coated in the dressing.

Chill: Cover the salad with plastic wrap and refrigerate for at least 2 hours (or overnight) to allow the flavors to meld together.

Serve: Before serving, give the salad a gentle stir and taste for seasoning, adding more salt and pepper if needed. Enjoy your refreshing Hawaiian macaroni salad chilled!
