1 lb large shrimp, peeled and deveined

2 tablespoons Jamaican curry powder

1 teaspoon allspice

2 tablespoons coconut oil

1 medium onion, diced

3 cloves garlic, minced

1-inch piece ginger, grated

1 green bell pepper, diced

1 red bell pepper, diced

1 large tomato, diced

1 can (14 oz) coconut milk

1 cup vegetable or chicken broth

1 tablespoon soy sauce

Salt and black pepper to taste

Fresh cilantro or parsley for garnish

Lime wedges for serving

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp with half of the curry powder, allspice, and a pinch of salt. Let it marinate for at least 15 minutes.

    Sauté Aromatics: In a large skillet or wok, heat the coconut oil over medium heat. Add the diced onion, garlic, and grated ginger. Sauté until the onion is translucent, about 3-4 minutes.

      Cook the Peppers: Add the green and red bell peppers to the skillet and sauté for another 2-3 minutes until slightly tender.

        Add Spices and Tomato: Stir in the remaining curry powder and diced tomato. Cook for 2-3 minutes, allowing the tomato to soften and the spices to bloom.

          Incorporate Liquids: Pour in the coconut milk and broth. Stir well to combine and let it come to a gentle simmer.

            Add Shrimp: Carefully add the marinated shrimp to the skillet, along with soy sauce. Cook for 5-7 minutes, or until the shrimp turn pink and opaque. Taste and adjust salt and pepper as needed.

              Garnish and Serve: Remove from heat. Garnish with fresh cilantro or parsley and serve with lime wedges on the side.
