1 ½ cups rolled oats

1 cup all-purpose flour

½ cup brown sugar, packed

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, melted

1 teaspoon vanilla extract

1 ½ cups rhubarb, chopped (fresh or frozen, thawed and drained)

½ cup granulated sugar

1 tablespoon cornstarch

1 teaspoon lemon juice

1 teaspoon cinnamon (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

    Prepare the Oat Mixture: In a large bowl, combine the rolled oats, flour, brown sugar, baking soda, salt, and cinnamon (if using). Mix well.

      Add Wet Ingredients: Pour in the melted butter and vanilla extract into the dry ingredients. Stir with a spatula until the mixture resembles a crumbly texture but holds together when pressed.

        Prepare the Rhubarb Filling: In another bowl, combine the rhubarb, granulated sugar, cornstarch, and lemon juice. Toss until the rhubarb pieces are evenly coated. Set this mixture aside.

          Assemble the Bars: Press half of the oat mixture firmly into the bottom of the prepared baking pan to form the crust. Spread the rhubarb filling evenly over this base. Crumble the remaining oat mixture on top of the rhubarb layer.

            Bake: Place the pan in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the filling is bubbling.

              Cool and Serve: Allow the oatmeal rhubarb bars to cool in the pan for at least 15 minutes. If using parchment paper, lift them out of the pan and transfer to a cooling rack. Once completely cooled, cut into squares and dust with powdered sugar if desired.
