For the Crust:

1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup unsalted butter, softened

1 teaspoon vanilla extract

¼ teaspoon salt

For the Cream Cheese Layer:

8 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

1 large egg

For the Rhubarb Filling:

2 cups fresh rhubarb, chopped

¾ cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

½ teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line with parchment paper for easy removal.

    Make the Crust: In a mixing bowl, combine the flour, powdered sugar, softened butter, vanilla extract, and salt. Mix until the mixture resembles coarse crumbs. Press the mixture firmly into the bottom of the prepared baking dish to form an even crust. Bake for 12-15 minutes or until lightly golden. Remove from oven and set aside to cool slightly.

      Prepare the Cream Cheese Layer: In a separate bowl, beat together the softened cream cheese, granulated sugar, vanilla extract, and egg until smooth and creamy. Pour the cream cheese mixture over the cooled crust and spread evenly.

        Make the Rhubarb Filling: In another mixing bowl, combine the chopped rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix until the rhubarb is well coated. Spread the rhubarb mixture over the cream cheese layer.

          Bake the Bars: Bake in the preheated oven for 30-35 minutes, or until the filling is set and the edges begin to bubble. A toothpick inserted in the center should come out clean.

            Cool and Serve: Allow the bars to cool completely in the baking dish on a wire rack. Once cooled, refrigerate for at least 2 hours before slicing into squares. Dust with additional powdered sugar before serving if desired.
