1 cup fresh strawberries, hulled and diced

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cornstarch

1/2 cup white chocolate chips (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare Strawberries: In a small bowl, mash half of the diced strawberries gently with a fork, leaving some chunks for texture.

      Cream Butter and Sugar: In a mixing bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).

        Add Wet Ingredients: Mix in the egg and vanilla extract until fully incorporated.

          Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cornstarch.

            Mix Together: Gradually add the dry mixture to the wet mixture, mixing until just combined. Fold in the mashed and diced strawberries, along with the white chocolate chips if using.

              Scoop Cookies: Using a cookie scoop or spoon, drop dough balls onto the prepared baking sheet, leaving space between each one as they will spread a little.

                Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set. They may seem soft, but they will firm up as they cool.
