1 ½ pounds flank steak

1 cup fresh spinach, chopped

½ cup sun-dried tomatoes, chopped

1 cup crumbled feta cheese

½ cup walnuts, chopped (optional)

2 cloves garlic, minced

1 tablespoon balsamic vinegar

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Prep the Flank Steak: Place the flank steak between two sheets of plastic wrap. With a meat mallet, gently pound the steak to about ½ inch thickness to tenderize it and create a more even surface for stuffing.

    Make the Filling: In a medium bowl, combine the chopped spinach, sun-dried tomatoes, feta cheese, walnuts (if using), minced garlic, balsamic vinegar, olive oil, oregano, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

      Stuff the Steak: Lay the pounded flank steak on a clean surface. Spread the filling mixture evenly across the steak, leaving a small border around the edges.

        Roll the Steak: Starting from one end, carefully roll the flank steak tightly into a log shape. Secure the ends and throughout the rolled steak with kitchen twine or toothpicks to keep the filling in during cooking.

          Preheat the Oven: Preheat your oven to 375°F (190°C).

            Sear the Steak: In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, carefully add the stuffed flank steak. Sear it for about 3-4 minutes on each side, until it's nicely browned.

              Bake: Transfer the skillet to the preheated oven and bake for about 25-30 minutes, or until the internal temperature reaches 135°F (for medium-rare). Adjust cooking time if you prefer a different doneness.

                Rest and Slice: Once cooked, remove the steak from the oven and cover it with aluminum foil. Let it rest for about 10 minutes. Then, slice the steak into 1-inch thick slices, revealing the beautiful stuffing inside.
