Ingredients
  

1 pound fresh cheese tortellini

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup kale, chopped (or spinach)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Tomatoes and Kale: Stir in the cherry tomatoes and kale (or spinach) and cook for 3-5 minutes until the tomatoes soften and the greens are wilted.

        Prepare the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine, then add the grated Parmesan cheese and Italian seasoning. Let the sauce simmer for about 2-3 minutes until it thickens slightly. Season with salt and pepper to taste.

          Combine Tortellini and Sauce: Add the cooked tortellini to the skillet and toss to coat them evenly in the sauce. Heat everything together for an additional 2 minutes.

            Serve: Remove from heat. Serve the Tuscan tortellini in bowls, garnished with fresh basil leaves and extra Parmesan cheese.
