Ingredients

1 ½ cups all-purpose flour

½ cup honey

½ cup brown sugar, packed

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground ginger

1 teaspoon ground cinnamon

½ teaspoon salt

2 large eggs

¾ cup buttermilk

½ cup unsalted butter, melted

Zest of 1 large orange

½ cup freshly squeezed orange juice

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 12-cup muffin tin or line it with paper liners.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, ground ginger, ground cinnamon, and salt until well combined.

Prepare Wet Ingredients: In another bowl, mix the honey, brown sugar, and melted butter until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the buttermilk, orange zest, orange juice, and vanilla extract until thoroughly combined.

Combine Mixtures: Gradually fold the dry ingredients into the wet ingredients using a spatula until just combined. Be careful not to overmix; a few lumps are okay.

Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about ¾ full.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

Cool Down: Remove the cakes from the oven and allow them to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Serve: Enjoy your delightful orange ginger honey cakes warm or at room temperature. They can be drizzled with additional honey or served with a dollop of whipped cream for added indulgence.
