1 cup all-purpose flour

1/2 cup almond flour

1/2 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 tbsp ground ginger

1/2 tbsp ground cinnamon

1/4 cup unsalted butter, melted

1/2 cup honey

1/2 cup brown sugar, packed

2 large eggs

1/2 cup freshly squeezed orange juice

Zest of 1 orange

1 tsp vanilla extract

1/2 cup chopped crystallized ginger

Optional: Powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a standard muffin tin or line it with paper liners.

    Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, almond flour, baking soda, baking powder, salt, ground ginger, and cinnamon. Whisk until well mixed and set aside.

      Cream Butter and Sugars: In a separate bowl, whisk together the melted butter, honey, and brown sugar until smooth and creamy.

        Add Eggs and Flavorings: Add the eggs one at a time, mixing well after each addition. Stir in the freshly squeezed orange juice, orange zest, and vanilla extract until well combined.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix. Fold in the chopped crystallized ginger for an added zing.

            Fill Muffin Tins: Spoon the batter into the prepared muffin tins, filling each cup about two-thirds full.

              Bake: Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center of a cake comes out clean.

                Cool: Let the cakes cool in the muffin tin for about 5 minutes, then transfer them to a wire rack to cool completely.
