Ingredients

2 cups graham cracker crumbs

1 cup heavy whipping cream

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

2 cups mixed berries (strawberries, blueberries, raspberries)

1/4 cup honey (optional, for drizzling)

Fresh mint leaves (for garnish)

Instructions

In a medium bowl, use an electric mixer to whip the heavy cream until stiff peaks form. Set it aside.

In another bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Gently fold the whipped cream into the cream cheese mixture until fully incorporated, being careful not to deflate it.

In serving glasses or bowls, layer the graham cracker crumbs at the bottom, followed by a layer of the cream cheese mix, and then a layer of mixed berries.

Repeat the layers until the glasses are filled, ending with the mixed berries on top.

Drizzle honey over the parfaits if desired, and garnish with fresh mint leaves.

Chill in the refrigerator for about 30 minutes before serving to let the flavors meld.
