12 lasagna noodles

2 cups ricotta cheese

1 cup powdered sugar

2 cups mascarpone cheese

1 teaspoon vanilla extract

1 cup chocolate chips (semi-sweet)

2 cups fresh strawberries, sliced

1 cup blueberries

1 cup heavy whipping cream

2 tablespoons sugar (for whipping cream)

1 tablespoon cocoa powder (for garnish)

Fresh mint leaves (for garnish)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Cook lasagna noodles according to package instructions until al dente. Drain and set aside on a clean kitchen towel to cool.

    Prepare the Cheese Mixture: In a mixing bowl, combine the ricotta cheese, powdered sugar, mascarpone cheese, and vanilla extract. Mix until smooth and creamy.

      Layer Ingredients: In a 9x13 inch baking dish, spread a thin layer of the cheese mixture on the bottom. Place 4 noodles over the cheese layer.

        Add Chocolate and Berries: Sprinkle 1/3 of the chocolate chips over the noodles, followed by a layer of fresh strawberries and blueberries. Add another layer of the cheese mixture on top.

          Repeat Layers: Continue layering with 4 more noodles, another 1/3 of chocolate chips, more strawberries, blueberries, and the cheese mixture. End with a final layer of noodles topped with the remaining cheese mixture and a sprinkle of any leftover chocolate chips.

            Chill: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the layers to set and the flavors to meld together.

              Whip the Cream: In a separate bowl, beat the heavy whipping cream with 2 tablespoons of sugar until stiff peaks form.

                Serve: Once set, cut the lasagna into squares. Serve each piece with a dollop of whipped cream on top, dust with cocoa powder, and garnish with fresh mint leaves.
