Ingredients

1 cup strong brewed coffee, cooled

2 tablespoons coffee liqueur (optional)

1 cup mascarpone cheese

1 cup heavy whipping cream

1/3 cup granulated sugar

1 teaspoon vanilla extract

16-20 ladyfinger cookies

2 tablespoons unsweetened cocoa powder

Shaved dark chocolate, for garnish

Fresh mint leaves, for garnish

Instructions

In a shallow dish, combine the brewed coffee and coffee liqueur (if using). Set aside.

In a large mixing bowl, whip the heavy cream, granulated sugar, and vanilla extract until soft peaks form.

In another bowl, gently fold the mascarpone cheese into the whipped cream mixture until smooth and well combined.

Quickly dip each ladyfinger into the coffee mixture for about 1-2 seconds, making sure not to soak them.

In serving cups or glasses, layer the dipped ladyfingers at the bottom, followed by a layer of the mascarpone mixture. Repeat the layers until the cups are filled, ending with the mascarpone mixture on top.

Sift cocoa powder over the top layer of mascarpone.

Refrigerate for at least 4 hours or overnight to allow flavors to meld and thicken.

Before serving, garnish with shaved dark chocolate and fresh mint leaves for an added touch.
