Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

Zest and juice of 2 limes

Zest and juice of 1 orange

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions

In a bowl, combine the olive oil, lime zest and juice, orange zest and juice, minced garlic, cumin, chili powder, salt, and pepper. Mix well to create a marinade.

Add the shrimp to the marinade, tossing to coat. Let it marinate for at least 15 minutes.

Preheat your grill to medium-high heat. Lightly oil the grill grates.

Skewer the shrimp (if using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning), and grill for about 2-3 minutes on each side until they turn pink and slightly charred.

While the shrimp are grilling, warm the tortillas on the grill for about 30 seconds on each side until pliable.

Assemble the tacos by placing a few grilled shrimp on each tortilla. Top with shredded red cabbage, slices of avocado, and a sprinkle of fresh cilantro.

Serve with lime wedges on the side for that extra zing.
