4 large eggs

1 cup whole milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

8 slices of thick-cut brioche or challah bread

2 cups cornflakes, crushed

1/4 cup granulated sugar

1/4 cup unsalted butter (for frying)

Maple syrup, for serving

Fresh berries or sliced bananas, for garnish (optional)

Powdered sugar, for dusting (optional)

Instructions
 

In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

    Preheat a skillet or griddle over medium heat and add 2 tablespoons of butter, allowing it to melt and coat the surface.

      Dip each slice of brioche or challah bread into the egg mixture, ensuring each side is fully saturated but not soaked through.

        Prepare a shallow plate with the crushed cornflakes and sugar mixed together. Press each soaked bread slice into the cornflake mixture, ensuring both sides are well coated.

          Place the coated slices onto the hot skillet. Cook for about 2-3 minutes on each side or until the cornflakes are golden brown and crispy.

            Add more butter to the skillet as needed, and repeat the process with the remaining slices.

              Serve the cornflake crusted French toast warm, drizzled with maple syrup, and garnish with fresh berries or bananas. Dust with powdered sugar if desired.
