4 cups mixed lettuce greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 large cucumber, diced

1 bell pepper (red or yellow), chopped

1/2 red onion, thinly sliced

1 avocado, diced

1/3 cup feta cheese, crumbled

1/4 cup olives (kalamata or green), pitted and sliced

1/4 cup sunflower seeds (for crunch)

1/4 cup fresh parsley or basil, chopped (for garnish)

For the Dressing:

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 tablespoon Dijon mustard

1 teaspoon honey or maple syrup
