Ingredients
  

2 cups heavy cream

1 cup whole milk

1 tablespoon vanilla extract

5 large egg yolks

1/2 cup granulated sugar (plus more for topping)

Pinch of salt

Fresh berries (for garnish, optional)

Instructions
 

Preheat the oven to 325°F (160°C).

    In a saucepan, combine the heavy cream, whole milk, and vanilla extract. Heat over medium heat until just simmering, but do not let it boil. Remove from heat and let cool slightly.

      In a mixing bowl, whisk together the egg yolks, 1/2 cup of granulated sugar, and a pinch of salt until smooth and creamy.

        Gradually add the warm cream mixture to the egg mixture, whisking continuously to prevent the eggs from curdling. Ensure everything is well combined.

          Strain the mixture through a fine mesh sieve into another bowl for a silky texture.

            Divide the custard mixture evenly among 6 ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.

              Carefully place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the custards are set but still slightly jiggly in the center.

                Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, cover them with plastic wrap and refrigerate for at least 4 hours or overnight.

                  When ready to serve, sprinkle a thin layer of granulated sugar on top of each custard. Using a kitchen torch, melt the sugar until it caramelizes and forms a crispy top. If you don’t have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to avoid burning.

                    Allow the crème brûlée to sit for about 5 minutes before serving, garnished with fresh berries if desired.
