Ingredients

1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ tsp baking powder

1 ½ tsp baking soda

1 tsp salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 tsp vanilla extract

1 cup boiling water

1 cup unsweetened coconut milk

½ cup dates, finely chopped

1 cup dark chocolate chips

1 ½ cups heavy cream

2 tbsp powdered sugar (for whipping cream)

Edible gold dust (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Add Wet Ingredients: Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed for about 2 minutes until smooth.

Incorporate Hot Water: Slowly stir in the boiling water (the batter will be thin) and mix until well combined. This step enhances the moisture of the cake.

Add Coconut Milk and Dates: Mix in the coconut milk and finely chopped dates, ensuring they're evenly distributed through the batter.

Fold in Chocolate Chips: Gently fold in the dark chocolate chips until they are just incorporated.

Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool Down: Once baked, remove the cakes from the oven and allow them to cool in the pans for about 10 minutes. Then, turn them out onto wire racks to cool completely.

Prepare the Whipped Cream: In a medium bowl, whip the heavy cream with powdered sugar until soft peaks form. Set aside.

Assemble the Cake: Once cooled, place one layer of the cake on a serving platter. Spread a layer of whipped cream on top, then place the second cake layer on top.

Decorate: Use the remaining whipped cream to frost the top and sides of the cake. Drizzle with additional dark chocolate or sprinkle with edible gold dust for a luxurious finish.

Serve and Enjoy!: Slice and serve your Dubai Chocolate Cake to friends and family, and enjoy the rich flavors accompanied by the lightness of the coconut and dates!
