For the Chocolate Cake:

1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Pistachio Layers:

1 ½ cups pistachios, shelled and unsalted (plus extra for garnishing)

½ cup powdered sugar

1 cup heavy cream

2 tablespoons sugar

1 teaspoon vanilla extract

2 tablespoons milk (if needed for consistency)

For the Chocolate Ganache:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

1 tablespoon butter

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Make the Chocolate Cake Batter:

      - In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.

        - Add eggs, milk, oil, and vanilla extract. Mix on medium speed for about 2 minutes.

          - Stir in boiling water (the batter will be thin). Pour batter evenly into the prepared cake pans.

            Bake the Cakes:

              - Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.

                - Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

                  Prepare the Pistachio Layer:

                    - In a food processor, blend the pistachios and powdered sugar until fine.

                      - In a separate bowl, whip the heavy cream with sugar and vanilla until stiff peaks form.

                        - Gently fold in the ground pistachio mixture into the whipped cream. If the mixture is too thick, add milk a tablespoon at a time until the desired consistency is achieved.

                          Prepare the Chocolate Ganache:

                            - Heat the heavy cream in a saucepan over medium heat until just simmering. Remove from heat.

                              - Add the chopped chocolate and let it sit for 5 minutes, then stir until smooth. Mix in the butter until melted.

                                Assemble the Cake:

                                  - Level the tops of the cooled chocolate cakes with a knife if necessary.

                                    - Place one chocolate cake layer on a serving platter. Spread half of the pistachio cream on top.

                                      - Place the second chocolate cake layer on top and spread the remaining pistachio cream on top.

                                        Finish with Ganache:

                                          - Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides for a beautiful presentation.

                                            - Garnish with additional chopped pistachios on top.

                                              Serve and Enjoy:

                                                - Let the cake sit for about 30 minutes to allow the ganache to set before slicing. Serve with extra whipped cream if desired.
