1 box Duncan Hines Yellow Cake Mix

1/2 cup unsalted butter (1 stick)

1/4 cup brown sugar, packed

1 can (20 oz) sliced pineapple in juice (reserve juice)

maraschino cherries (about 10-12)

3 large eggs

1/3 cup vegetable oil

1 tsp vanilla extract

1 tsp baking powder

Prep the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or round cake pan with butter.

    Make the Topping: In a small saucepan, melt the 1/2 cup of butter over low heat. Add the brown sugar and stir until dissolved. Pour this mixture into the bottom of the prepared pan.

      Arrange the Pineapple: Layer the pineapple slices evenly over the brown sugar mixture. Place a maraschino cherry in the center of each pineapple slice for a pop of color.

        Prepare the Cake Batter: In a large mixing bowl, combine the Duncan Hines Yellow Cake Mix, reserved pineapple juice (about 1 cup), eggs, oil, vanilla extract, baking powder, and salt. Mix on medium speed until well combined (about 2-3 minutes).

          Pour the Batter: Carefully pour the cake batter over the arranged pineapple slices in the pan, ensuring it covers them evenly.

            Bake the Cake: Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean. The top should be golden brown.

              Cool and Invert: Remove from the oven and let it cool in the pan for about 10-15 minutes. Then, carefully invert the cake onto a serving platter. If any pineapple slices stick to the pan, simply place them back onto the cake.
