1 pound dried red beans (or kidney beans), soaked overnight

1 tablespoon olive oil

1 large onion, diced

2 celery stalks, diced

1 green bell pepper, diced

4 cloves garlic, minced

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for heat preference)

6 cups low-sodium chicken broth

2 bay leaves

1 teaspoon dried thyme

Salt and pepper to taste

1 cup long-grain white rice

2-3 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Hot sauce (optional, for serving)

Instructions
 

Prepare the Beans: Drain and rinse the soaked beans. Set aside.

    Sauté the Vegetables: In a large Dutch oven, heat the olive oil over medium heat. Add the diced onion, celery, and bell pepper, stirring occasionally until softened (about 5-7 minutes). Stir in the garlic and cook for another minute until fragrant.

      Season the Mixture: Add the Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Mix well to coat the vegetables in the spices.

        Combine Beans and Broth: Add the soaked beans to the pot, then pour in the chicken broth. Stir in the bay leaves and thyme. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low and cover the pot. Allow the beans to simmer for about 1.5 to 2 hours or until the beans are tender. Stir occasionally and add water if necessary to keep the beans submerged.

            Cook the Rice: About 20-30 minutes before you’re ready to serve, stir in the rice and cover the pot again. Let the mixture simmer until the rice is cooked and fluffy (approximately 20 minutes).

              Final Touches: Once everything is cooked, remove the bay leaves, and adjust seasoning if necessary. If you desire a creamier consistency, you can mash some of the beans against the side of the pot.

                Serve: Ladle the red beans and rice into bowls. Garnish with sliced green onions and chopped parsley. Serve hot with hot sauce on the side if desired.
