Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1 cup bell pepper diced
  • 0.5 cup onion diced
  • 1 teaspoon garlic powder for flavor
  • 1 teaspoon cumin for flavor
  • 4 large flour tortillas or corn tortillas
  • 2 tablespoons olive oil for brushing
  • 0.5 cup sour cream for serving
  • 0.5 cup salsa for serving

Instructions
 

  • In a mixing bowl, combine the cooked chicken, shredded cheese, diced bell pepper, diced onion, garlic powder, and cumin. Mix well.
  • Lay out the flour tortillas on a clean surface. Evenly distribute the chicken mixture on half of each tortilla.
  • Fold the tortillas over to create a half-moon shape, pressing down gently to seal.
  • Brush both sides of each quesadilla with olive oil to ensure a crispy texture.
  • Preheat the air fryer to 375°F (190°C) for about 5 minutes.
  • Place the quesadillas in the air fryer basket in a single layer. Cook for about 8 minutes, flipping halfway through, until golden brown and crispy.

Notes

Serve warm with sour cream and salsa. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for a crispy finish.
