Ingredients
  

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), chopped

1 jalapeño, seeds removed and finely chopped (optional for heat)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

4 cups chicken broth

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Avocado slices (optional, for serving)

Tortilla chips or strips (for serving)

Instructions
 

In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and sauté for about 3-4 minutes until it starts to soften.

    Stir in minced garlic, chopped bell pepper, and jalapeño. Cook for an additional 2-3 minutes until the vegetables are tender.

      Add chicken breasts to the pot, followed by black beans, corn, diced tomatoes (with juices), chicken broth, cumin, chili powder, smoked paprika, and season with salt and pepper.

        Bring the mixture to a boil, then reduce heat to low and cover. Let it simmer for 20-25 minutes, or until the chicken is cooked through.

          Carefully remove the chicken breasts and shred them using two forks. Return the shredded chicken back to the pot.

            Stir in the lime juice and adjust seasoning if necessary.

              Serve hot, garnished with fresh cilantro, avocado slices, and tortilla chips or strips for added crunch.
