Ingredients
  

1 cup orzo pasta

2 chicken breasts, boneless and skinless

1/2 cup sun-dried tomatoes, chopped (preferably in oil)

2 cups chicken broth

1 cup fresh spinach, roughly chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon olive oil

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional)

Fresh basil leaves for garnish

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the orzo is cooking, season the chicken breasts with salt, pepper, and dried oregano. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C). Remove from the skillet and let rest for a few minutes before slicing.

      Sauté Aromatics: In the same skillet, reduce heat to medium-low. Add minced garlic and sun-dried tomatoes and sauté for about 1-2 minutes until fragrant.

        Combine Ingredients: Pour the chicken broth into the skillet and bring to a simmer. Add the chopped spinach and cooked orzo, stirring to combine. Allow it to simmer for another 3-5 minutes until the spinach wilts and is heated through.

          Add Chicken: Slice the cooked chicken breasts and place them on top of the orzo mixture. If desired, sprinkle with Parmesan cheese and let it melt slightly.

            Serve: Garnish with fresh basil leaves and additional grated Parmesan if desired. Serve hot and enjoy your healthy meal!
