Easy Baked Tortellini Casserole

1 package (9 oz) refrigerated cheese tortellini

1 tablespoon olive oil

1 small onion, diced

2 garlic cloves, minced

1 can (14 oz) crushed tomatoes

1 can (15 oz) tomato sauce

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup ricotta cheese

1.5 cups shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

Fresh basil for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

      In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

        Add the minced garlic to the skillet and sauté for an additional minute until fragrant.

          Stir in the crushed tomatoes, tomato sauce, dried basil, dried oregano, Italian seasoning, salt, and pepper. Let the sauce simmer for about 5-7 minutes, stirring occasionally.

            In a large mixing bowl, combine the cooked tortellini, ricotta cheese, and half of the mozzarella cheese. Pour the prepared tomato sauce over the mixture and gently stir to combine.

              Transfer the tortellini mixture to a greased 9x13 inch baking dish. Sprinkle the remaining mozzarella cheese and the grated Parmesan cheese evenly over the top.

                Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Once removed from the oven, let it cool for a few minutes. Garnish with fresh basil if desired, then serve and enjoy!
