Ingredients

1 lb boneless, skinless chicken breasts, thinly sliced

2 tablespoons vegetable oil

1 tablespoon black pepper (freshly cracked for best flavor)

2 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

3 cloves garlic, minced

1 inch ginger, minced

1 bell pepper (red or green), sliced

1 small onion, sliced

2 green onions, chopped (for garnish)

Cooked rice (for serving)

Instructions

Marinate the Chicken: In a bowl, combine the sliced chicken with soy sauce, oyster sauce, and cornstarch. Mix well to evenly coat the chicken. Let it marinate for at least 15 minutes.

Prepare the Skillet: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the marinated chicken in a single layer. Avoid overcrowding the pan; you may need to do this in batches.

Cook the Chicken: Sear the chicken for about 3-4 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Stir-Fry the Vegetables: In the same skillet, add a little more oil if needed, then toss in the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant. Add the sliced onion and bell pepper, cooking for another 2-3 minutes until slightly softened.

Combine: Return the cooked chicken to the skillet. Sprinkle in the freshly cracked black pepper and drizzle with sesame oil. Toss everything together, cooking for an additional 2 minutes to combine flavors.

Serve: Remove from heat and garnish with chopped green onions. Serve hot over a bed of fluffy cooked rice.
